Thinking of Lucy's Corner

I was in a Lucy's Corner kind of mood today, so I thought I would make some chicken quesadillas for lunch. Lucy's Corner was my small coffee shop in Nashua, NH. I always ran a quesadilla special on Mondays and really miss the lunch crowd. Now all I get is two hungry men and one dog that barks non-stop when he's hungry. Well while I was prepping the onions and peppers I got a little surprise.

New concept for "buy one , get one free".
I would like to go back and serve all of my lovely ladies, doctors and nurses. I miss you all.
